Ingredients
1 cup sliced squid 30 g chopped KRA-CHAI 10 chillies 10 g pepper 10 kaffir lime
leaves, tablespoons fish sauce, vegetable oil
Chilli paste 1 tablespoon coriander seeds 10 dried bird's-eye chillies
(deseeds) 3 tablespoons chopped shallots 3 tablespoons chopped garlic 1
tablespoon chopped galangal 2 tablespoons sliced lemon grass 1 teaspoon shrimp
paste 1 tablespoon chopped coriander root
Preparations 1. To make the chilli paste, dry fry the coriander in a wok
over low heat for about 5 minutes, then grind to a powder. Add the remaining
ingredients, except the shrimp paste, and blend well. Add the ground spice
mixture and shrimp paste and blend again.
2. Bring the water to boil, put the squid into the pot when cooked remove from
the heat.
3. Fry the chilli paste in a wok when cooked and fragrant add the KRA-CHAI,
squid, pepper, kaffir lime leaves, chillies, fish sauce to taste.
