PAD THAI GOONG SOD
(Thai fried noodles)

Preparation

Ingredients 300 g fresh flat rice-flour noodles 10 prawns 500 g bean sprouts 3 duck eggs 1 cake hard soya beancurd 1/2 cup ground roast peanuts 1 tablespoon chopped garlic 1 tablespoon chopped shallots 4 tablespoons sugar 1/2 cup oil 3 tablespoons tamarind juice 50 g chives 2-3 tablespoons each of fish sauce and lime juice 1 tablespoon dried pound chillies 
Preparation  1. Soak the noodles in warm water to soften.
                      2. Heat 3 tablespoons oil in a wok and saute garlic and shallots. Add the noodles, fish sauce, lime juice, tamarind juice quickly fry to prevent sticking, set aside the noodles in a plate.
                      3. Put another 3 tablespoons oil into a pan, fry prawns, beancurd, chillies together.
                      4. Put the remained oil into a pan, break the eggs into pan and scramble spreading egg thoroughtly, add the noodles, bean sprouts, chives, mix well.
                      5. Serve garnished with peanuts, bean sprouts, banana blossom, chives.
